HARVESTING

Friday, September 18th

EXPECTED

COLOR

Deep Purple

EXPECTED TEXTURE

Thick ・Dense・Starchy

FIELD NOTE

This patch is running especially sweet. The Poniponi deepens the purple color and adds sweetness to the Moi, while the dense, starchiness makes a naturally thick poi. It holds its flavor well refrigerated and usually begins to develop a light sourness by the next day.

IN THE LOʻI

The kalo we grow, and the record we’re keeping of each variety.

SUPER MOI

A Moi hybrid kalo we grow for its dense, starchy texture and clean flavor. Pale-fleshed on its own, it makes a thick-bodied poi and blends especially well with darker Lehua varieties.

Lehua PONI (Poniponi)

A purple-fleshed Lehua hybrid that brings deeper color and sweetness to our poi. We often mix it with Moi—the Poniponi darkens the batch and gives it a noticeably sweeter finish.
